Description

These Grandma BarkerâÂÂs Yeast Rolls are the epitome of Southern comfort baking. Made with a classic "hot milk" method using boiling water and dry milk powder, these rolls develop an incredibly soft, tender crumb and a delicate sweetness that pairs perfectly with any meal. The addition of butter and a hint of sugar creates a golden crust that is irresistible fresh from the oven. Whether served alongside fried chicken, pot roast, or as a standalone snack with honey butter, these rolls bring a nostalgic, home-style warmth to your table. Simple ingredients yield impressive results, making this a reliable recipe for family dinners, holiday gatherings, or weekend breakfasts.

Directions

  1. In a medium bowl, pour boiling water over the dry milk powder and salt. Whisk vigorously until the mixture is completely smooth and dissolved.
  2. Stir in the sugar and butter (or margarine) until the butter is fully melted and incorporated into the milk mixture.
  3. Allow the milk mixture to cool to room temperature (approximately 100°F-110°F) so it does not kill the yeast.
  4. Meanwhile, in a large mixing bowl, sprinkle the yeast over the warm water. Let stand for a few minutes until foamy, then stir in 1 cup of flour to create a smooth batter.
  5. Cover the yeast mixture loosely and let it stand for 15 minutes to activate.
  6. Pour the cooled milk mixture into the yeast batter. Stir to combine.
  7. Add the remaining flour, one cup at a time, mixing by hand or with a mixer until a soft, sticky dough forms. You may not need all the flour; add only what is necessary to stop sticking.
  8. Turn the dough out onto a lightly floured surface. Knead briskly for 3 minutes until the dough is smooth, elastic, and no longer sticky.
  9. Place the dough in a large bowl that has been lightly greased with butter. Turn the dough once to coat the top with butter.
  10. Cover the bowl with a clean kitchen cloth or plastic wrap. Let rise in a warm, draft-free place until doubled in size, about 1 to 1.5 hours.
  11. Punch the dough down to release air bubbles. Knead briefly on a floured surface for 3 minutes to redistribute yeast and strengthen the gluten.
  12. Cover the dough again and let it rise a second time until doubled in bulk, about 1 to 1.5 hours.
  13. Punch the dough down again. Roll it out on a floured surface to a thickness of about 1/2 inch.
  14. Use a biscuit cutter or round cutter to cut out rounds. Place them on ungreased cookie sheets, spacing them about 1.5 inches apart.
  15. Cover the rolls loosely with a cloth and let them rise in a warm place until doubled in size, about 30-45 minutes.
  16. Near the end of the rising time, preheat your oven to 375°F (190°C).
  17. Bake the rolls in the preheated oven for 12 to 15 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.
