Directions
-
Preheat oven to 350°F (175°C).
-
Pour 1 cup of boiling water over the raisins and add 1 teaspoon of baking soda. Stir well and set aside to soak.
-
Bring the shortening to room temperature, then cream it well in a large mixing bowl.
-
Add the granulated sugar and brown sugar one cup at a time, creaming well after each addition until light and fluffy.
-
Add the eggs one at a time, beating well after each addition.
-
In a separate bowl, sift together the flour, baking powder, cinnamon, cloves, and allspice.
-
Stir the vanilla extract into the creamed mixture.
-
Drain the raisins thoroughly. Sprinkle 1 tablespoon of flour over them and toss to coat evenly.
-
Alternately add the dry flour mixture and the buttermilk to the creamed mixture, beginning and ending with the flour mixture. Mix well after each addition.
-
Stir in the quick cooking oats until evenly distributed. The dough will be thick.
-
Using a heavy wooden spoon, fold in the chopped walnuts and coated raisins.
-
Grease cookie sheets lightly.
-
Drop the dough by teaspoonfuls onto the prepared cookie sheets, spacing them about 2 inches apart.
-
Bake for 10-12 minutes, or until the bottoms are golden and the tops look dry.
-
Remove from oven and let cookies cool on the baking sheet for 2 minutes, then transfer to a wire rack or wax paper to cool completely.
