Description

This hearty Greek Lamb Stew is a comforting classic that transforms tender chunks of lamb into a deeply flavorful dish. Slow-simmered with white wine, tomato sauce, and aromatic herbs like rosemary and thyme, the meat becomes fall-apart tender. The addition of blanched onions and pitted black olives adds texture and a touch of briny sweetness. Perfect for a cozy dinner party or a satisfying weekend meal, this stew captures the essence of Mediterranean home cooking. Serve with crusty bread or over rice to soak up the delicious savory broth.

Note

The original ingredient list was incomplete; ensure you have 3 lb lamb, 2 c chicken stock, 1 c white wine, 1/4 c olive oil, 1 cn tomato sauce, 1 bay leaf, 2 small white onions, 1/4 ts ground thyme, 1/2 c black olives, 1 cl garlic, salt, and pepper.

To blanch the onions: peel them, boil in water for 2-3 minutes, then plunge into ice water to stop cooking.

For deeper flavor, you can add a bay leaf during the simmering process and remove it before serving.

Leftovers taste even better the next day as the flavors continue to develop. Store in an airtight container in the refrigerator for up to 3 days.
