  1. Snap off the tips and tails of the green beans and trim ends.
  2. Bring a large pot of salted water to a boil.
  3. Add the green beans and cook for 10 minutes, or until barely tender.
  4. Drain the beans immediately and run them under cold water to stop the cooking process and retain color.
  5. In a large skillet, heat 4 tablespoons of olive oil over low heat.
  6. Add the thinly sliced onions and cook, covered, for 10 minutes until soft but not browned.
  7. Add the chopped tomatoes, salt, pepper, and bouquet garni to the skillet.
  8. Cook the mixture over fairly high heat for 10 to 15 minutes, stirring occasionally, until the sauce is very thick.
  9. Remove and discard the bouquet garni.
  10. Add the drained green beans to the skillet and simmer, covered, for 5 minutes.
  11. Meanwhile, puree the basil, garlic, parsley, and remaining 2 tablespoons of olive oil in a blender until smooth.
  12. Stir the basil-garlic puree into the tomato and bean mixture.
  13. Taste and correct seasoning with additional salt or pepper if needed.
  14. Heat through briefly and serve warm.
