Ingredients

Directions

  1. Preheat oven to 350ðF (177ðC) (optional, if warming butter; otherwise melt butter on stove or microwave).
  2. Lightly grease a 9-inch pie plate.
  3. In a bowl, combine 1 3/4 cups of soft macaroon crumbs with melted butter-flavored Crisco or butter until the mixture resembles wet sand.
  4. Press the crumb mixture firmly and evenly into the bottom and up the sides of the greased pie plate to form a crust.
  5. Spread 1 pint of softened lime sherbet evenly over the crust.
  6. Place the pie in the freezer for about 1 hour, or until the sherbet layer is firm.
  7. While the first layer freezes, soften 1 quart of vanilla ice cream. Fold 1 1/2 cups of soft macaroon crumbs into the vanilla ice cream until well combined.
  8. Remove the pie from the freezer. Spread the vanilla ice cream and macaroon mixture evenly over the firm lime sherbet layer.
  9. Return the pie to the freezer for about 1 hour, or until the second layer is firm.
  10. Spread the remaining lime sherbet evenly over the vanilla layer.
  11. Freeze the pie for several hours, or until completely firm and set.
  12. Remove the pie from the freezer 10âÂÂ15 minutes before serving to allow it to soften slightly for slicing.

Note

For best results, ensure all frozen ingredients (sherbet and ice cream) are softened but not melted before spreading to achieve smooth layers.

If you cannot find butter-flavored Crisco, regular melted butter or coconut oil (for a dairy-free option) works well for the crust.

Store the pie in the freezer for up to 2 weeks. Keep it tightly covered with plastic wrap or aluminum foil to prevent freezer burn and absorption of other odors.

To make this recipe vegan, ensure you use vegan macaroon crumbs, dairy-free butter or oil for the crust, and vegan lime sherbet and vanilla ice cream.

For a decorative touch, you can sprinkle a few extra macaroon crumbs on the final sherbet layer before freezing.
