Description

This vibrant Green Pepper Salsa offers a delightful twist on traditional Mexican dips, featuring the distinct, slightly smoky flavor of roasted green bell peppers. The recipe combines tender peppers with rich tomato puree, aromatic onions, and fresh cilantro for a balanced blend of sweetness and zest. A hint of garlic and hot pepper sauce adds a gentle warmth that elevates the dish without overpowering the natural flavors. Perfectly textured to be neither too chunky nor completely smooth, this salsa is incredibly versatile. It pairs beautifully with warm tortillas, grilled chicken, or beans for a quick weeknight dinner. You can also serve it chilled alongside poached fish for a refreshing appetizer. With simple ingredients and quick preparation, this homemade salsa brings restaurant-quality flavor to your table with minimal effort.

Ingredients

Directions

  1. Core, seed, and chop the 4 green bell peppers.
  2. Combine the chopped peppers, 1 cup tomato puree, 1 tablespoon olive oil, and 1 small chopped onion in a microwave-safe 4-cup measuring cup or bowl.
  3. Cover the container with vented plastic wrap and microwave on high until the peppers are just tender, approximately 4 to 5 minutes.
  4. Carefully uncover and let the mixture cool for about 5 minutes.
  5. Transfer the cooled pepper mixture into a blender.
  6. Add 7 sprigs of fresh cilantro (or parsley), 1 mashed garlic clove, 1 teaspoon hot pepper sauce, and 1 tablespoon minced fresh oregano (or 1 teaspoon dried).
  7. Pulse the blender for 2 to 3 seconds until the salsa is blended but still retains some texture, not fully pureed.
  8. Taste and adjust seasoning if necessary before serving.
