Description

This unique Southern-inspired dessert transforms firm, unripe tomatoes into a surprisingly sweet and tangy pie. The bright acidity of the green tomatoes balances perfectly with warm spices like allspice, sweet brown sugar, and spicy candied ginger. Golden raisins add chewy bursts of sweetness, while lemon juice and rind provide a fresh, citrusy lift. Encased in a flaky, buttery double crust, this pie offers a delightful contrast of textures and flavors. It is an excellent choice for potlucks, family gatherings, or as a conversation-starting dessert that showcases the versatility of garden produce. Serve slightly warm for the best flavor experience.

Ingredients

Directions

  1. Peel and grate the green tomatoes using a coarse grater or food processor until you have 2 1/2 cups of shredded tomato.
  2. Place the grated tomatoes in a colander and drain overnight, or press out the juices throughout the day to remove excess liquid.
  3. Preheat the oven to 450&# 194;°F (230ðC).
  4. Prepare your favorite double pie crust recipe.
  5. Roll out half of the dough and line an 8-inch pie pan with it.
  6. Roll out the remaining dough and set aside for the top crust.
  7. In a large bowl, mix the drained tomatoes with the remaining ingredients: salt, brown sugar, allspice, flour, candied ginger, lemon rind, and lemon juice.
  8. Pour the tomato mixture into the prepared pie shell.
  9. Cover the filling with the second crust, sealing the edges tightly.
  10. Prick several holes in the top crust with a fork to allow steam to escape.
  11. Bake at 450ðF (232ðC) for 10 minutes.
  12. Reduce the oven temperature to 350ðF (175ðC) and continue baking for 40 minutes, or until the crust is golden brown and filling is bubbly.

Note

Ensure the green tomatoes are very firm and unripe for the best texture and tangy flavor.

Draining the tomatoes is crucial; excess moisture can make the pie soggy. Pressing them firmly helps achieve the right consistency.

If using a pre-made crust, follow the package instructions for baking times.

Let the pie cool for at least 30 minutes before slicing to allow the filling to set.
