Ingredients

Directions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the small red potatoes to the boiling water.
  3. Cover and simmer over low heat until the potatoes are tender when pierced with a fork, about 15 to 20 minutes.
  4. Drain the potatoes well and transfer them to a bowl of ice water to chill completely.
  5. While potatoes cook, soak thinly sliced red onions in cold water for 15 minutes to mellow their bite, then drain.
  6. In a large mixing bowl, combine the drained red onions with seasoned rice vinegar.
  7. Quarter the chilled potatoes and add them to the onion and vinegar mixture.
  8. Trim tender watercress sprigs from their stems, then finely chop enough of the coarser stems to add texture.
  9. Add the watercress leaves and chopped stems to the potato mixture and toss gently to combine.
  10. In a small bowl, whisk together soy sauce and firmly packed brown sugar until smooth.
  11. Soak alder or mesquite wood chips in water for at least 30 minutes, then drain.
  12. Preheat a grill to medium-high heat and place the soaked wood chips on the coals or in a smoker box.
  13. Pat the salmon fillet dry and season lightly with salt.
  14. Place the salmon skin-side down on the oiled grill grates.
  15. Brush the top of the salmon with the soy sauce glaze.
  16. Grill for 4 to 5 minutes, then carefully flip and brush with remaining glaze.
  17. Grill for another 4 to 6 minutes until the salmon is cooked through and flakes easily with a fork.
  18. Serve the grilled salmon alongside the potato and watercress salad.
