  2. Visually inspect the meat chunks; if the fat content appears to be less than 20 to 25 percent, add strips of beef fat to ensure juiciness.
  3. Season the meat chunks generously with salt and pepper.
  4. Grind the boneless meats together through a meat grinder using a large grinding blade with 3/8-inch holes.
  5. Grind the meat a second time to achieve a finer, more cohesive texture.
  6. Loosely shape the ground meat into 12 equal-sized hamburger patties.
  7. If cooking indoors, heat a large, heavy skillet over high heat.
  8. Add 2 ounces of beef suet to the skillet and allow it to melt completely.
  9. Place six burgers into the skillet, ensuring they are not crowded.
  10. Cook the burgers for about 4 minutes on the first side, then flip and cook for another 4 minutes for rare, or longer if preferred.
  11. Remove the cooked burgers and repeat the process with the remaining six burgers in the same beef suet.
