Ingredients

Directions

  1. Soak the Idaho Red beans overnight in cold water, then drain and rinse.
  2. Cook the beans in a large pot of fresh water until tender but still holding their shape, about 60-90 minutes. Drain well.
  3. While beans cook, drain the canned pear halves, reserving the syrup in a measuring cup.
  4. Preheat your oven to 300F (150C).
  5. In a skillet, fry 4 slices of bacon over medium heat until crisp. Remove bacon to a paper towel and crumble into small pieces. Reserve 2 tablespoons of the bacon fat.
  6. In the same skillet, saute the sliced onions in the reserved bacon fat until softened and translucent, about 5 minutes.
  7. In a large buttered casserole dish, combine the cooked beans, sauted onions, and crumbled bacon.
  8. In a small bowl, whisk together 3/4 cup of the reserved pear syrup, molasses, vinegar, minced garlic, prepared mustard, salt, cloves, and pepper.
  9. Pour the sauce mixture over the bean mixture and stir thoroughly to coat evenly.
  10. Cover the casserole dish tightly with foil.
  11. Bake for 2 hours, stirring gently every 30 minutes. If the mixture looks dry, add a splash more pear syrup.
  12. Remove the foil. Arrange the pear halves on top of the beans.
  13. Spoon any remaining liquid from the bottom of the casserole over the pears.
  14. Top each pear half with half a slice of the remaining raw bacon (4 slices total).
  15. Bake uncovered for an additional 30 minutes, until the bacon is crisp and the pears are heated through.
  16. Let stand for 5 minutes before serving.

Note

For best texture, ensure beans are fully tender before starting the bake. If using dried beans, soaking overnight significantly reduces cooking time and improves digestibility.

The pear syrup is crucial for moisture and sweetness. If the syrup is too thin, you can reduce it slightly on the stovetop before mixing with the other sauce ingredients.

To make this vegetarian, omit the bacon and use olive oil for sauting the onions. You may also skip the raw bacon topping or substitute with candied pecans for crunch.

Storage: Allow leftovers to cool completely before covering and refrigerating for up to 3 days. Reheat gently in the oven or microwave to prevent the beans from drying out.
