Directions
-
Preheat your oven to 325&# 194;°F (165ðC).
-
Rinse the turkey breast thoroughly and pat it completely dry with paper towels.
-
Using a sharp knife, carefully loosen the skin from the meat, starting at one end, while leaving the skin attached along one edge like a flap.
-
Make small slits in the surface of the turkey meat and insert the thinly sliced garlic cloves into these slits.
-
In a small bowl, combine the salt, chopped fresh rosemary (or dried), and chopped fresh thyme (or dried).
-
Sprinkle half of the herb and salt mixture directly onto the exposed meat under the skin.
-
Pull the skin back over the meat and secure it with toothpicks to keep the herbs in place.
-
Sprinkle the remaining herb mixture over the outside of the skin, then dust lightly with paprika.
-
Trim the ends and tops off the green onions, then fold them in half lengthwise.
-
Place the folded green onions inside the cavity of the turkey breast.
-
Place the turkey breast in a roasting pan.
-
Roast in the preheated oven for 2 to 2 1/2 hours, or until an instant-read thermometer inserted into the thickest part registers 170ðF (77ðC) and the meat is no longer pink.
-
Remove from the oven and let the turkey rest for 10 minutes before slicing to allow juices to redistribute.
