Description

This minimalist yet deeply flavorful soup transforms simple ingredients into a comforting elixir. The base is a clear broth simmered with generous amounts of garlic, fresh sage, thyme, bay leaf, and a twist of orange rind, creating a complex aromatic profile that is both cleansing and warming. It serves as an excellent palate cleanser or a light starter for a larger meal. While the basic version is vegan and oil-free, it can be easily enriched with pasta for heartiness or finished with a velvety egg yolk and vinegar liaison for a luxurious texture. Perfect for chilly evenings or when you need a soothing, digestive-friendly dish.

Ingredients

Directions

  1. Place water in a medium saucepan and bring to a boil over high heat.
  2. Add the peeled garlic cloves, fresh sage sprig, thyme twig, bay leaf, orange rind, and a pinch of salt.
  3. Return the mixture to a boil, then immediately reduce the heat to low.
  4. Simmer uncovered for 20 minutes to allow the herbs and garlic to infuse the water.
  5. Pour the broth through a fine-mesh sieve into a bowl or clean saucepan.
  6. Press the solids (especially the garlic) with the back of a spoon to extract all the flavorful juice.
  7. Discard the solid herbs and rind.
  8. Taste the broth and adjust seasoning with additional salt and freshly ground black pepper if needed.
  9. For the vegan version, drizzle with fruity olive oil and serve hot.
  10. For the pasta variation, add angel hair pasta to the simmering broth before straining and cook for 5 minutes until tender.
  11. For the rich egg version, beat egg yolks with red wine vinegar in a small bowl.
  12. Temper the yolks by slowly stirring in a few spoonfuls of the hot broth.
  13. Stir the tempered yolk mixture back into the hot broth off the heat, whisking constantly to prevent curdling.
  14. Ladle into bowls and sprinkle with grated Parmesan or Swiss cheese and a drizzle of olive oil.

Note

Herb Substitutions: If fresh sage or thyme is unavailable, use 1 teaspoon of dried sage and 1 teaspoon of dried thyme, but add them at the beginning of the simmering process.

Orange Rind: Use only the orange part of the peel, avoiding the bitter white pith. You can also use lemon rind for a brighter note.

Storage: The plain herb broth can be refrigerated in an airtight container for up to 3 days. Reheat gently before serving.

Rich Version Tip: Ensure the broth is hot but not boiling when adding the egg yolk mixture to avoid scrambling the eggs. The vinegar helps stabilize the emulsion.

Pasta Variation: If adding pasta, you may need to add a bit more water to the pot to ensure the pasta has enough liquid to cook properly.
