Homemade Sausage
Description
These homemade sausage patties offer a quick, protein-packed meal without the preservatives found in store-bought links. By using very lean ground beef, you get a lighter dish that still delivers rich, savory flavor. The blend of ground sage, dried thyme, and garlic powder creates a classic American herb profile, while a touch of liquid smoke adds a deep, campfire-like aroma. Crushed red pepper provides a subtle warmth that balances the earthy herbs. These patties are incredibly versatile: serve them with eggs for breakfast, add them to a sandwich for lunch, or pair with roasted vegetables for a hearty dinner. They cook up in minutes, making them perfect for busy weeknights when you crave comfort food without the heavy guilt.Ingredients
Directions
-
In a large bowl, combine the ground beef, ground sage, dried thyme, garlic powder, black pepper, liquid smoke, and crushed red pepper.
-
Mix thoroughly with your hands or a spoon until all ingredients are evenly distributed throughout the meat.
-
Divide the meat mixture into equal portions and shape them into uniform patties, approximately 1/2-inch thick.
-
If broiling: Place patties on a broiler pan and cook under high heat for 4-5 minutes per side, or until browned and cooked through.
-
If pan-frying: Heat a skillet over medium-high heat. Add patties and cook for 4-5 minutes per side.
-
If pan-frying, pour off excess fat as it collects during cooking to keep the patties lean.
-
Transfer cooked patties to a plate lined with paper towels to drain any remaining grease.

Note
To make "Hot" Sausage patties, increase the crushed red pepper by 1 tablespoon for a spicier kick.
These patties can be made ahead and frozen uncooked. Separate with parchment paper to prevent sticking, then cook from frozen by adding a few minutes to the cooking time.
Lean ground beef releases less fat than higher-fat varieties, so you may not need to add any oil to the pan when frying.
