Description

This Honey Oatmeal Bread is a comforting classic that combines the wholesome goodness of oats with the natural sweetness of honey. The result is a loaf with a tender crumb, a slightly chewy texture, and a beautiful golden crust. Its incredibly versatile, making it perfect for breakfast toast with butter, hearty sandwiches, or simply enjoyed warm with a slice of cheese. The yeast creates an airy structure, while the honey adds a subtle floral note that pairs beautifully with the nutty flavor of the oats. Ideal for cozy weekend mornings or as a homemade gift, this bread is easy to make with standard pantry ingredients and delivers a fresh-from-the-oven aroma that fills the kitchen with warmth.

Ingredients

Directions

  1. Combine 1 1/2 cups water, honey, and butter in a small saucepan.
  2. Heat over low heat until the butter melts and the liquid reaches 120F (49C).
  3. Place 5 cups flour, oats, salt, and yeast into the bowl of a stand mixer.
  4. Attach the dough hook to the mixer.
  5. Turn the mixer to speed 2 and mix for 30 seconds to combine dry ingredients.
  6. Gradually add the warm liquid mixture to the flour mixture while mixing for about 1 minute.
  7. Add the 2 eggs and mix for an additional minute.
  8. Continue mixing on speed 2, adding the remaining flour 1/2 cup at a time, until the dough clings to the hook and cleans the sides of the bowl.
  9. Knead on speed 2 for 3-5 minutes until the dough is smooth and elastic.
  10. Transfer the dough to a greased bowl, turning once to grease the top surface.
  11. Cover the bowl and let rise in a warm, draft-free place until doubled in bulk, about 1 hour.
  12. Punch down the dough and divide it in half.
  13. Shape each half into a loaf and place into greased loaf pans.
  14. Cover and let rise in a warm, draft-free place until doubled in bulk, about 1 hour.
  15. Preheat oven to 375F (190C).
  16. Combine the reserved egg white (from separating the eggs earlier if desired, or use a fresh one) with 1 tablespoon water.
  17. Brush the tops of the loaves with the egg wash.
  18. Sprinkle with additional oatmeal if desired.
  19. Bake at 375F (191C) for 40 minutes, or until golden brown and hollow-sounding when tapped.
  20. Remove from pans immediately and cool completely on wire racks.
