Description

This Honey "Risin" Bread is a delightful fusion of quick bread convenience and yeast-leavened richness. The batter combines warm honey, softened butter, and beaten eggs with a blend of ginger, cinnamon, and nutmeg for a cozy, aromatic flavor profile. Unlike traditional yeast breads, this recipe uses baking powder for lift, resulting in a tender, cake-like texture that is incredibly moist. Directions

  1. In a small bowl, combine yeast, warm water, and 1 teaspoon sugar. Let stand for 15 minutes or until foamy.
  2. Heat 1 cup of the honey in a saucepan over medium heat until it reaches a boil.
  3. Pour the boiling honey into a large mixing bowl and let it cool for 3 minutes.
  4. Add softened butter to the warm honey and beat until smooth and emulsified.
  5. In a separate bowl, beat eggs and 1/4 cup sugar until the mixture is pale, lemony-colored, and slightly thickened.
  6. Add the honey-butter mixture and the activated yeast mixture to the egg mixture, beating well to combine.
  7. Stir in 3/4 cup of the flour until just incorporated.
  8. In a small bowl, sift together the remaining 1 cup flour, baking powder, ginger, cinnamon, nutmeg, and salt.
  9. Add the dry ingredients to the wet mixture and mix well until a smooth batter forms.
  10. Turn the batter into a well-buttered and floured loaf pan.
  11. Bake at 350 degrees Fahrenheit (177°C) for 50 minutes, or until a toothpick inserted into the center comes out clean.
  12. Cool the bread in the pan for 10 minutes.
  13. Turn the loaf onto a wire rack to cool completely.
  14. Brush the top and sides of the cooled loaf with the remaining 1/3 cup honey.
