Description

This Hot Cross Frittata is a quick and vibrant vegetarian meal that brings the comfort of traditional Italian eggs into the microwave. Featuring a medley of red and green bell peppers, sliced zucchini, and onions, it offers a satisfying crunch balanced by soft, custardy eggs. The dish is topped with melted provolone or mozzarella cheese and decorated with bell pepper strips arranged in a cross pattern, giving it a festive look suitable for brunch or a light dinner. Ready in just 30 minutes, it's an easy way to use up fresh vegetables. Serve it warm as a main course or slice it for a hearty sandwich filling.

Directions

  1. Place the red bell pepper strips, chopped green bell pepper, zucchini slices, thinly sliced onion, olive oil, and basil leaves into a 9-inch microwave-safe pie plate or glass dish.
  2. Cover the dish with vented plastic wrap or a microwave-safe lid and microwave on high for 2 to 3 minutes, or until the vegetables are tender-crisp.
  3. Remove the dish from the microwave and carefully remove the red bell pepper strips, setting them aside for decoration later.
  4. Sprinkle half of the shredded cheese over the cooked vegetables in the pie plate and set the remaining cheese aside.
  5. Pour the milk into a microwave-safe glass measure and microwave on high for about 1 minute, or until hot but not boiling.
  6. In a separate bowl or measuring cup, beat the eggs and then whisk in the hot milk until well combined.
  7. Pour the egg and milk mixture evenly over the vegetables and cheese in the pie plate.
  8. Sprinkle the remaining reserved cheese over the top of the egg mixture.
  9. Arrange the reserved red bell pepper strips on top of the frittata to form four "X" shapes or a decorative cross pattern.
  10. Sprinkle the salt-free seasoning evenly over the entire surface.
  11. Microwave on 70% power (Medium-High) for 8 to 10 minutes, rotating the dish twice during cooking, until the center is set and no longer runny.
