Description

This Hot Smoke Finishing Sauce is a bold, complex condiment that adds depth and heat to any meal. It combines the smoky richness of dried chipotle peppers and cocoa powder with the sweetness of maple syrup and bourbon. The slow-cooking process melds these flavors into a thick, glossy sauce perfect for brushing on grilled meats, stirring into stews, or serving as a dipping sauce. The subtle warmth of spices like allspice and nutmeg complements the sharp tang of cider vinegar, creating a balanced profile that is both sweet and spicy.

Ingredients

Directions

  1. Heat olive oil in a large, heavy-bottomed pot over medium heat.
  2. Add the coarsely chopped yellow onion and minced garlic; sauté until soft and translucent, about 5-7 minutes.
  3. Lower the heat and add brown sugar, maple syrup, bourbon, cider vinegar, allspice, nutmeg, thyme, cinnamon, coriander, and cocoa powder.
  4. Simmer the mixture, stirring frequently, for 5 to 10 minutes to meld the flavors and slightly reduce the liquid.
  5. If using dried chipotle peppers, rehydrate them in hot water for 15 minutes, then drain. Cut the chipotle peppers and the fresh habanero pepper in half.
  6. Add the prepared peppers, ketchup, water, and salt to the pot.
  7. Cover the pot and cook slowly over low heat for 1 1/2 hours, stirring occasionally. Add more water if the sauce becomes too thick.
  8. Remove from heat and let the sauce cool slightly until it is safe to handle.
  9. Transfer the sauce to a blender and puree until smooth.
