Ingredients

Directions

  1. In a large bowl, combine the boiling water and instant potato flakes. Stir until smooth and let cool to lukewarm.
  2. In a separate small bowl, dissolve the active dry yeast in the warm water. Let stand for 5-10 minutes until foamy.
  3. Add the honey, salt, and beaten egg to the potato mixture. Stir in the yeast mixture.
  4. Gradually add the all-purpose flour, one cup at a time, mixing well after each addition until a soft dough forms.
  5. Turn the dough out onto a lightly floured surface. Knead for 5-7 minutes until smooth and elastic.
  6. Place the dough in a greased bowl, cover with a damp cloth, and let rise in a warm place for 1 hour, or until doubled in size.
  7. Punch down the dough and shape it into a loaf. Place it in a greased 9x5-inch loaf pan.
  8. Cover and let rise for another 30-45 minutes, or until the dough rises 1 inch above the rim of the pan.
  9. Preheat the oven to 375ðF (190ðC).
  10. Bake for 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  11. Remove from the pan and let cool on a wire rack before slicing.

Note

For a vegan version, substitute the egg with 1/4 cup of applesauce or an egg replacer.

Store leftover bread in an airtight container at room temperature for up to 3 days, or freeze for longer storage.

Ensure the water for the yeast is not too hot, as it can kill the yeast. It should feel warm to the touch, like bathwater.
