  1. chicken stock 1/4 c Pitted black olives, chopped 1/4 c Pine nuts 2 Tomatoes, diced Salt Pepper
  2. Remove skin from chicken legs.
  3. In skillet, heat il and butter over medium heat; brown chicken legs in batches, if necessary.
  4. Remove chicken from skillet and set aside.
  5. In the same skillet, cook onion and garlic for 3 minutes.
  6. Return chicken to skilleet along with carrots, parsley, bay leaves and wine;
  7. cover and
  8. simmer for 30 minutes.
  9. Remove bay leaves.
  10. Add olives, pine nuts and tomatoes to skillet; simmer for about 2 minutes or until heated through.
  11. Season with salt and pepper.
  12. Arrange chicken legs and vegetables in serving platter.
  13. Serve remaining liquid separately as sauce.
