Description

These hearty Italian bean patties are a delicious way to enjoy canned beans, transformed into savory, protein-rich cakes with the help of cornmeal and aromatic herbs like thyme and sage. The mixture is chilled to firm up, then pan-fried until golden and crisp on the outside while remaining tender inside. They are served atop slices of Italian bread that have been broiled and rubbed with fresh garlic for a classic, rustic touch. A bright, uncooked tomato-basil relish adds a fresh, acidic counterpoint to the earthy beans, balancing the flavors perfectly.

Ingredients

Directions

  1. In a medium bowl, coarsely mash the beans with a potato masher, or pulse them in a food processor until chunky.
  2. In a large bowl, combine the mashed beans, chopped tomatoes, green onions, minced garlic, thyme, sage, cumin, black pepper, and cayenne pepper.
  3. Mix thoroughly to distribute the herbs and vegetables evenly throughout the bean mixture.
  4. Gradually mix in enough cornmeal to form a firm but not dry mixture that holds together when pressed; season with salt to taste.
  5. Cover and refrigerate the mixture for 1 to 2 hours to allow the flavors to blend and the patties to firm up.
  6. Preheat the broiler.
  7. Form the chilled bean mixture into six equal-sized patties.
  8. Place the Italian bread slices on a baking sheet and broil 6 inches from the heat source for 1 to 2 minutes on each side until toasted and lightly browned.
  9. Immediately rub both sides of the hot toasted bread with the cut clove of garlic.
  10. Prepare the Tomato-Basil Relish by combining the chopped plum tomatoes, chopped fresh basil, lemon juice, and Worcestershire sauce in a small bowl. Season the relish with salt and pepper to taste and refrigerate until ready to serve.
  11. When ready to cook the patties, spray a large skillet with cooking spray and place over medium heat until hot.
  12. Cook the patties in the skillet until browned on one side, about 5 minutes, then flip and cook for another 5 minutes until browned on the second side.
  13. To serve, spoon the tomato-basil relish onto the garlic-rubbed bread slices.
  14. Top the relish with the warm bean patties and garnish with fresh basil sprigs.
