  1. Sanitize all brewing equipment thoroughly before starting.
  2. Heat water in a large pot to approximately 170&# 194;°F (76ðC).
  3. Dissolve the dried malt extract and corn sugar in the hot water, stirring gently until fully dissolved.
  4. Bring the wort to a rolling boil.
  5. Add the 1.5 oz of Cascade Hops for the boiling phase and boil for 60 minutes, maintaining a steady boil.
  6. Turn off the heat and let the wort cool slightly until it stops boiling.
  7. Add the split jalapenos to the hot wort and cover the pot to steep for 30 minutes.
  8. Remove the jalapenos from the wort using a sanitized strainer or tongs.
  9. Add the 0.5 oz of Cascade Hops for the finishing phase and steep for 15 minutes.
  10. Remove the finishing hops from the wort.
  11. Cool the wort rapidly to fermentation temperature (around 68ðF or 20ðC) using an ice bath or chiller.
  12. Transfer the cooled wort to a sanitized fermentation vessel.
  13. Pitch the yeast according to the manufacturer's instructions.
  14. Seal the fermenter with an airlock and allow to ferment for 1-2 weeks until bubbling subsides.
  15. Bottle or keg the ale once fermentation is complete.
