Description

This high-calcium cabbage bread is a delightful twist on traditional quick breads, offering a moist crumb and vibrant color from finely shredded red and green cabbage. The earthy sweetness of the cabbage pairs beautifully with warm notes of mace and ground ginger, while lemon and orange juice concentrate add a bright, zesty lift. Enriched with yogurt and powdered milk, this loaf is not only delicious but also packed with calcium. It is perfect for a hearty breakfast, a healthy sandwich base, or a side to soups and salads.

Ingredients

Directions

  1. Preheat oven to 350°F (175°C).
  2. Place shredded red and green cabbage in a small bowl and toss with lemon juice. Set aside.
  3. In a large measuring cup or medium bowl, combine yogurt, orange juice concentrate, canola oil, powdered milk, and egg. Whisk until smooth and well blended.
  4. Stir the lemon-tossed cabbage mixture into the wet ingredients.
  5. In a separate large bowl, whisk together whole-wheat flour, all-purpose flour, toasted sesame seeds, baking powder, salt, mace, and ground ginger.
  6. Gradually add the cabbage mixture to the dry ingredients, stirring gently until just combined. Do not overmix.
  7. Pour the batter into a greased 8x4-inch loaf pan.
  8. Bake for 35-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove from oven and let cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
