Simple to prepare with pantry staples, this recipe brings home-style warmth to any meal.Ingredients
Directions
-
Combine the corn meal, self-rising flour, pancake mix, salt, sugar, and pepper in a mixing bowl.
-
In a separate measuring cup, lightly beat the egg.
-
Add the diced onion to the egg and enough milk to fill the cup to the 1-cup mark.
-
Pour the liquid mixture into the dry ingredients and mix well until combined.
-
If the batter is not moist throughout, add a tablespoon or two more milk and blend until smooth.
-
Heat oil or fish drippings in a heavy frying pan to a depth of 1/4 inch over medium-high heat.
-
Test the oil temperature by dropping a small amount of batter into the fat; if it sizzles immediately, the oil is ready.
-
Drop a teaspoonful of batter into the oil to test consistency; if it spreads too thin, stir in more cornmeal, or if too dense, add a little milk.
-
Drop the batter from the tip of a teaspoon into the hot oil, cooking 6 to 10 pieces at a time without overlapping.
-
Cook until lightly browned on the bottom, about 3 to 4 minutes.
-
Turn the hushpuppies and brown the other side for about 3 minutes.
-
Remove hushpuppies and drain on paper towels.
-
Keep cooked hushpuppies warm while frying the remaining batter, adding more oil to the pan as needed.

Note
Traditionally, hushpuppies are fried in the drippings left after frying fish, which imparts a fresh fish flavor to the batter.
In Florida, it is common to use a combination of self-rising flour, cornmeal, and pancake mix for hushpuppies and other breads.
If you do not have self-rising flour or pancake mix, you can substitute all-purpose flour and plain cornmeal. To the dry ingredients, add 1 tablespoon of baking powder and 1 teaspoon of salt before proceeding with the recipe.
Ensure the fat stays at a medium-hot temperature to brown the hushpuppies properly without burning them. Check often to prevent scorching.
