-
Soak dried porcini mushrooms in lukewarm water for 20 minutes, then drain and chop finely. Reserve the soaking liquid.
-
Heat olive oil in a large heavy-bottomed pot over medium-high heat. Add Italian sausage and ground beef, breaking up the meat with a spoon. Cook until browned and cooked through.
-
Add chopped onion, garlic, and sliced fresh mushrooms to the pot. Cook for 5-7 minutes until softened.
-
Stir in the chopped porcini mushrooms, drained tomatoes with their juice, tomato paste, red wine, beef broth, water, sugar, basil, oregano, rosemary, and black pepper. Simmer uncovered for 20-30 minutes until thickened.
-
In a bowl, mix ricotta cheese, beaten eggs, minced parsley, and half of the grated Parmesan cheese until smooth.
-
Cook lasagna noodles according to package directions until al dente. Drain and lay flat on kitchen towels to prevent sticking.
-
Preheat oven to 375°F (190°C). Spread a thin layer of meat sauce in the bottom of a 9x13 inch baking dish.
-
Layer noodles, meat sauce, ricotta mixture, and mozzarella pieces. Repeat layers, ending with noodles, remaining sauce, and topped with remaining Parmesan and mozzarella.
-
Cover dish tightly with foil and bake for 45 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden brown.
-
Let lasagna rest for 15 minutes before slicing to allow layers to set.
