Description

This elegant party cake features a tender, lemon-scented crumb that is light and airy, thanks to the inclusion of stiffly beaten egg whites. The cake is assembled with a vibrant orange filling between the layers and finished with a smooth orange mist frosting. A sprinkle of shredded coconut mixed with fresh orange rind adds a delightful textural contrast and bursts of citrus flavor on top. Perfect for birthdays, holiday gatherings, or any special celebration, this dessert brings a nostalgic, home-style charm to the table.

Directions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease two 10-inch layer cake pans.
  2. Sift the cake flour once, then measure. In a bowl, combine the measured flour with baking powder and salt, and sift this mixture together three times.
  3. In a large mixing bowl, cream the softened butter and grated lemon rind together until well combined.
  4. Gradually add the sugar to the butter mixture, beating until the mixture is light, fluffy, and pale in color.
  5. Add the sifted flour mixture alternately with the milk, adding a small amount at a time. Beat thoroughly after each addition until the batter is smooth.
  6. Stir in the vanilla extract.
  7. Gently but thoroughly fold in the stiffly beaten egg whites using a spatula.
  8. Reserve about one-third of the batter. Pour the remaining two-thirds of the batter into the prepared pans.
  9. To the reserved batter, gently fold in the well-beaten egg yolks until fully blended. This will create a slightly richer, yellower layer.
  10. Bake all layers in the preheated oven for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  11. Allow the cakes to cool in the pans for 10 minutes, then remove to wire racks to cool completely.
  12. Once cooled, assemble the cake by placing one yellow layer on a serving plate. Spread with Orange Filling.
  13. Place the white (egg white only) layer on top of the filling. Spread with more Orange Filling.
  14. Top with the remaining yellow layer.
  15. Frost the top and sides of the cake with Orange Mist Frosting.
  16. In a small bowl, blend 4 oz of shredded coconut with 1 1/2 teaspoons of grated orange rind.
  17. Sprinkle the orange coconut mixture over the top of the frosted cake.
