Description

These authentic Pontic Greek meat patties, known as Keftethes, offer a delightful balance of tender meat and aromatic herbs. The combination of veal and pork provides a rich, savory flavor profile, while the addition of soaked stale bread keeps the patties incredibly moist. Infused with fresh mint, parsley, garlic, and onion, each bite bursts with traditional Mediterranean taste. The addition of a touch of vinegar and baking soda helps tenderize the meat and create a light, airy texture. These patties are perfect for family dinners, potlucks, or as a hearty main course served alongside roasted potatoes and a fresh green salad. They are easy to prepare and freeze well, making them a versatile option for busy weeknights or entertaining guests.

Ingredients

Directions

  1. Finely grind the veal and pork together, ensuring some fat is left on the pork for moisture and flavor.
  2. Soak the stale bread slices in cold water until soft, then squeeze out excess water and crumble into a large mixing bowl.
  3. Add the chopped onion, garlic, tomato, parsley, mint, egg, and vinegar to the bowl with the bread.
  4. Sprinkle in the bicarbonate of soda, salt, and black pepper, mixing these ingredients well with the bread mixture.
  5. Add the ground meat to the bowl and mix thoroughly by hand until the meat and seasonings are evenly distributed.
  6. Cover the bowl and refrigerate the mixture for 1 hour to allow the flavors to meld and the mixture to firm up.
  7. Preheat oil in a large skillet over medium heat.
  8. Take about 2 tablespoons of the meat mixture at a time and roll into balls, moistening hands with water if the mixture sticks.
  9. Roll the meatballs in flour to coat lightly, then flatten into rounds approximately 5 cm (2 inches) in diameter.
  10. Carefully place the patties in the hot oil and fry for 4-5 minutes on each side until golden brown and cooked through.
  11. Transfer the cooked patties to paper towels to drain excess oil.
  12. Serve immediately while hot.
