Description

These Keftethes Apo Ton Pontos are a traditional Greek delicacy that brings the bold flavors of Pontic cuisine to your dinner table. Made with a hearty mixture of veal and pork stew meat, these patties are enriched with stale bread soaked in water, which ensures a tender texture rather than a dense one. The mix is brightened with fresh parsley, mint, and basil, along with finely chopped onion, garlic, and tomato. A touch of vinegar and bicarbonate of soda helps keep the meat light and airy as it fries. The result is a golden, crispy exterior with a juicy, aromatic interior. These patties are perfect served hot with a crisp salad or alongside roasted potatoes for a satisfying, home-cooked meal that feels both comforting and festive.

Directions

  1. Finely grind the veal and pork together, leaving some fat on the pork for moisture.
  2. Soak the crustless stale bread slices in cold water until soft, then squeeze out all excess water.
  3. Crumble the squeezed bread into a large mixing bowl.
  4. Add the chopped onion, garlic, parsley, mint, basil, tomato, egg, vinegar, bicarbonate of soda, salt, and pepper to the bowl.
  5. Add the ground meat mixture to the bowl and blend everything together lightly but thoroughly with your hands until well combined.
  6. Cover the mixture and chill in the refrigerator for 1 hour to firm up.
  7. Take about 2 tablespoons of the mixture at a time and roll into balls, moistening hands with water if the mixture sticks.
  8. Roll the balls in flour to coat, then flatten into rounds approximately 5 cm (2 inches) in diameter.
  9. Heat oil in a skillet over medium-high heat until hot.
  10. Shallow fry the patties for 4-5 minutes on each side, or until golden brown and cooked through.
  11. Turn carefully with a spatula or tongs, as the patties may puff up during cooking.
  12. Drain on paper towels and serve immediately.
