  1. Dissolve the yeast in 1/4 cup of warm water (105-110F) and let stand for 5-10 minutes until foamy.
  2. In a microwave-safe bowl, combine milk, sugar, salt, and shortening. Microwave for 1-2 minutes until warm but not boiling. The shortening does not need to be completely melted.
  3. Let the milk mixture cool slightly so it is warm to the touch, then set aside.
  4. In a large mixing bowl, combine 2 cups of the flour.
  5. Add the dissolved yeast, beaten egg, and the warm milk mixture to the flour.
  6. Using an electric mixer on low speed, beat the mixture until well combined.
  7. Gradually add the remaining flour, 1/2 cup at a time, mixing until the dough becomes too stiff for the mixer to turn.
  8. Switch to a wooden spoon or knead by hand to incorporate the rest of the flour until a soft dough forms.
  9. Turn the dough out onto a lightly floured surface and knead for 15-20 strokes until smooth and elastic.
  10. Place the dough in a large bowl coated with butter or oil, turning to coat the top.
  11. Cover the bowl and refrigerate the dough for at least 1 hour or up to 24 hours for enhanced flavor.
