Description

These vibrant Kiwi Fruit Jellies capture the fresh, tart essence of ripe kiwis in a delightful chewy candy. By blending the fruit with lemon juice and simmering with pectin, you create a glossy, jewel-toned treat that is both visually stunning and delicious. The natural acidity of the kiwi balances the sweetness perfectly, making these jellies an ideal palate cleanser or a sophisticated addition to any dessert board. They are simple to prepare yet impressive enough for special occasions, offering a homemade charm that store-bought candies simply cannot match. Enjoy them as a healthy-ish sweet snack or gift them in pretty packaging.

Ingredients

Directions

  1. Line an 8x10-inch pan with wax paper or parchment paper.
  2. Combine kiwi fruit, lemon juice, and 1 cup sugar in a food processor or blender.
  3. Puree until smooth, working in batches if necessary.
  4. Pass the puree through a fine strainer or food mill into a large saucepan to remove seeds and pulp.
  5. Add the remaining 2 cups of sugar to the saucepan.
  6. Stir constantly and bring the mixture to a boil over medium heat.
  7. Boil for 3 minutes, then add the butter and continue boiling for 3 more minutes while stirring.
  8. Remove from heat and stir in the liquid pectin and green food coloring, if using.
  9. Pour the mixture immediately into the prepared pan.
  10. Allow to set in a cool place overnight until firm.
  11. Cut the set jelly into attractive shapes.
  12. Roll the pieces in superfine sugar to coat.

Note

Store the finished jellies in an airtight container with wax paper between layers to prevent sticking. They will keep for up to 1 week in a cool place.

If the mixture is too thick to strain easily, you can add a tablespoon of water to help it pass through the strainer, but this may affect setting time slightly.

Ensure the pan is well-lined to prevent the sticky jellies from adhering to the bottom.
