Ingredients

Directions

  1. Preheat oven to 375ðF (190ðC).
  2. In a large frying pan, melt 3 tablespoons of butter over medium heat.
  3. Add chopped scallions and sauté until softened, about 3 minutes.
  4. Add the ground meat to the pan and cook, breaking it up with a spoon, until browned.
  5. Stir in cubed zucchini, cubed eggplant, drained tomatoes, and chopped fresh parsley.
  6. Season with salt and freshly ground pepper to taste.
  7. Cover the pan and simmer for 20 minutes, stirring occasionally.
  8. Add ground coriander or allspice and dried oregano, then simmer covered for another 10 minutes.
  9. Remove from heat and stir in grated Mizithra cheese.
  10. If the mixture is too wet, sprinkle with bread crumbs to absorb excess liquid.
  11. Line a 9x12x3-inch baking pan with 6 sheets of filo dough, brushing each sheet with melted butter.
  12. Spread the meat and vegetable filling evenly over the filo base.
  13. Top with the remaining 4 sheets of filo dough, brushing each sheet with melted butter.
  14. Score the top layer of filo into squares or diamonds with a sharp knife.
  15. Bake for 35 to 40 minutes, or until the top is golden brown and crisp.
  16. Remove from oven and let stand for 10 minutes before cutting and serving warm.
