  1. Heat 3 tablespoons of butter in a skillet over medium heat. Add minced shallots and cook until soft and translucent, about 3-4 minutes.
  2. Add the ground lamb or beef to the skillet. Break up the meat with a fork and cook until it changes color and is browned, stirring frequently.
  3. Pour in the dry white wine and simmer for a few minutes to deglaze the pan and reduce the liquid slightly.
  4. Stir in the chopped parsley, salt, and pepper to taste. Simmer for another 2-3 minutes. Remove from heat and let the mixture cool completely.
  5. Once cooled, stir in the grated cheese and beaten egg. If the mixture is too wet, add the bread crumbs to absorb excess moisture.
  6. Unroll the filo sheets and cut them into thirds lengthwise. Keep the unused sheets covered with a damp towel to prevent drying out.
