Description

A traditional Bengali-style vegetable stew featuring potatoes, sweet potatoes, cauliflower, eggplant, and green beans. Simmered in a spiced tomato and chile base, this dish delivers deep, savory flavors with a thick, clinging sauce. Perfect as a comforting side dish or main course, it is rich in vegetables and aromatic spices like cumin, turmeric, and garam masala.

Ingredients

Directions

  1. Heat oil & add sugar.
  2. Fry for a few seconds.
  3. Lower heat & add bay leaf & five spice.
  4. Cook for a few seconds.
  5. Add ginger, turmeric, cumin & salt.
  6. Stir & add the tomatoes & water.
  7. Add potatoes, sweet potatoes & cover & simmer for 15 minutes.
  8. Add cauliflower, beans, eggplant & red chile paste.
  9. Simmer, covered, for 10 minutes.
  10. Reduce heat again & uncover & simmer for a further 10 minutes.
  11. Sprinkle hot water over the vegetables if they start to stick but be careful because you want a thick sauce that clings to the vegetables.
  12. Stir in the peas & simmer, covered, until the vegetables are all cooked right through.
  13. Remove from heat & blend in the garam masala.
  14. Sprinkle with cilantro & serve.
