Ingredients

Directions

  1. Preheat oven to 350F (177C).
  2. Grease a 9-inch round cake tin.
  3. Sift the flour and 2 tablespoons of cocoa together; set aside.
  4. Separate the 4 eggs, placing whites in a clean, dry bowl and yolks in a separate heatproof bowl with the 1/2 cup sugar.
  5. Place the bowl with yolks and sugar over a pan of simmering water.
  6. Whisk continuously until the mixture is light, creamy, and thickened.
  7. Remove from heat and continue whisking until the mixture cools to room temperature.
  8. Gently fold the sifted flour-cocoa mixture into the egg yolk mixture.
  9. Fold in the melted butter until just combined.
  10. Pour the batter into the prepared cake tin.
  11. Bake for 30 minutes or until the sponge springs back when tapped lightly in the center.
  12. Allow the cake to cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely.
  13. While the cake cools, preheat oven to 325F (163C) and line a cookie sheet with parchment paper.
  14. Beat the 4 egg whites by hand or with an electric mixer until foamy.
  15. Gradually add the 1 cup of sugar while continuing to beat until stiff, glossy peaks form.
  16. Sift the remaining 1/3 cup sugar and 1 tablespoon cocoa together.
  17. Gently fold the cocoa-sugar mixture into the meringue by hand.
  18. Spread the meringue onto the prepared cookie sheet.
  19. Bake at 325F (163C) until the meringue is puffy and dry on the outside.
  20. Turn off the oven and leave the meringue inside with the door closed until the oven is completely cool.
  21. Break the cooled meringue into shards and arrange over the cooled chocolate cake before serving.

Note

The meringue can be made several days in advance and stored in an airtight container in a dry place. This ensures it stays crisp.

Ensure the bowl and beaters for the egg whites are completely clean and grease-free, as any fat will prevent the whites from whipping properly.

For a richer flavor, you can add a pinch of salt to the meringue mixture.

Serve the cake at room temperature. The contrast between the soft cake and crisp meringue is best experienced fresh.
