Description

This Indian side-dish features Red chard, coarsely chopped, Vegetable oil, Dried red chile, Five spice powder. It delivers aromatic, well-seasoned taste, sweet, indulgent flavor. Ingredients

Directions

  1. Onion rings, to garnish Steam chard & then puree in a blender.
  2. Set aside.
  3. Heat oil in a skillet over medium low heat.
  4. Fry red chile until it darkens.
  5. Add five spice powder & fry until the spices start to crackle.
  6. Add onion & fry until it is a rich brown, stir constantly.
  7. Add green chile, turmeric, salt & sugar.
  8. Add water & bring to a boil.
  9. Add eggplant & lower the heat slightly.
  10. Cover & simmer until the eggplant is soft.
  11. Add pureed chard.
  12. Uncover & cook for a minute or so to heat the mixture right through.
  13. Stir all the time.
  14. Remove from heat & blend in the garam masala.
  15. Garnish with onion rings & serve immediately.
  16. Excellent with pigeon peas & bread.
