Directions

  1. Preheat the oven to 350°F (175°C).
  2. Drain the stewed tomatoes, reserving the juices, and chop the tomatoes into small pieces.
  3. In a medium bowl, combine the chopped tomatoes and reserved juices with ground lamb, bread crumbs, chopped onion, egg, 1 teaspoon salt, 1/2 teaspoon pepper, and thyme. Mix until well combined.
  4. Lightly grease a 1.5 to 2-quart ring mold. Press the lamb mixture firmly into the mold. Use a spoon or finger to create an indentation along the inner and outer rims to prevent juices from spilling over.
  5. Place the ring mold on a jelly roll pan and bake in the preheated oven.
  6. While the lamb bakes, prepare the spinach filling. In an ovenproof dish, thoroughly blend the spinach, sour cream, cream cheese, melted margarine, remaining 1/2 teaspoon salt, remaining 1/4 teaspoon pepper, and ground nutmeg.
  7. After the lamb has baked for 30 minutes, remove the pan from the oven. Place the dish with the spinach filling into the oven alongside the lamb mold and bake for the remaining 30 minutes.
  8. Remove the lamb mold from the oven and let it rest for 5 minutes. Drain any excess juices from the mold.
  9. Carefully invert the lamb ring onto a serving platter. If it sticks, run a knife around the edges before flipping.
  10. Spoon the hot creamy spinach filling into the center of the lamb ring.
  11. Warm the ketchup slightly and drizzle it over the top of the lamb ring before serving.
