Description

This vibrant Lamb Tartare offers a sophisticated take on the classic raw meat dish, using well-trimmed lamb loin for a tender, clean bite. The meat is finely ground and bound with a small amount of cracked wheat and water, creating a cohesive texture that holds the bold flavors together. Fresh herbs like basil, oregano, and marjoram provide an aromatic lift, while green onions add a sharp crunch. Chilled thoroughly before serving, this dish is best enjoyed immediately for optimal freshness. It serves as an elegant starter or light main course, perfect for entertaining guests who appreciate high-quality ingredients and minimalist cooking techniques. Pair with crusty garlic toast and crisp vegetables for a complete meal.

Directions

  1. Cut the well-trimmed lamb loin into 1-inch cubes.
  2. Place lamb cubes in a food processor and pulse using on/off turns until the meat reaches the consistency of ground hamburger; do not over-process into a paste.
  3. Transfer the ground lamb to a large mixing bowl.
  4. Sprinkle 2 teaspoons of the cracked wheat over the lamb, followed by 2 teaspoons of water.
  5. Knead the mixture into the meat by punching down with your fist and turning the mixture.
  6. Repeat this process in 5 more additions, incorporating the remaining cracked wheat and water gradually.
  7. With the final addition of wheat and water, knead in the minced green onion, parsley, basil, oregano, marjoram, salt, pepper, and red pepper flakes until evenly distributed.
  8. Line a small round-bottomed bowl with plastic wrap, leaving excess hanging over the edges.
  9. Pack the lamb mixture firmly into the bowl, smoothing the top surface.
  10. Cover tightly with the overhanging plastic wrap.
  11. Refrigerate the molded lamb for up to 3 hours to set and chill thoroughly.
  12. Unmold the lamb tartare by placing a platter over the bowl and inverting it, then peel away the plastic.
  13. Sprinkle the top with additional minced fresh herbs and green onion.
  14. Arrange cherry tomatoes, sliced cucumber, and lemon slices around the tartare on the platter.
  15. Garnish with fresh basil sprigs and serve immediately with garlic toast.
