Description

Lasagne Verdi is a vibrant twist on the classic Italian bake, featuring homemade pasta sheets infused with fresh spinach for a beautiful green hue and earthy flavor. The tender noodles are layered between robust tomato sauce, creamy cheese sauce, and freshly grated Parmesan. This dish offers a satisfying texture contrast between the soft pasta and the rich, savory fillings. It is an excellent centerpiece for family dinners or Sunday gatherings, bringing a touch of rustic elegance to the table. While it requires some effort to make the dough from scratch, the result is a deeply flavorful, comforting meal that showcases the freshness of the ingredients. Serve warm for the best experience.

Ingredients

Directions

  1. Squeeze most of the liquid from the cooked spinach.
  2. Chop the spinach very fine to the consistency of a smooth paste.
  3. Make dough by mixing the spinach paste, eggs, and flour until a smooth consistency is achieved.
  4. Roll the dough thin, sprinkling often with flour to avoid sticking.
  5. Cut the rolled dough into strips about 5x8 inches.
  6. Bring 6 quarts of water to a boil with 3 Tbsp salt.
  7. Cook a few pasta strips at a time for 2 minutes, uncovered.
  8. Remove the cooked strips from boiling water with a slotted spoon and drop immediately into a basin of cold water.
  9. Drain the pasta strips and spread them over a slightly damp cloth.
  10. Preheat oven to 400&# 194;°F (204ðC).
  11. Coat the bottom of a lasagna baking dish with 2 Tbsp olive oil and 1/4 cup tomato sauce.
  12. Place one layer of pasta strips in the dish; lightly cover with tomato sauce and dollops of cheese sauce.
  13. Sprinkle with some freshly grated Parmesan cheese.
  14. Repeat layers until you have used up all the pasta and the sauces.
  15. Sprinkle the top with the remaining olive oil.
  16. Bake in the 400ðF (204ðC) oven for approximately 20 minutes.
  17. Serve with remaining Parmesan cheese in a separate dish.

Note

The original recipe includes a personal anecdote about inviting orthodox friends to eat kosher green lasagne, emphasizing the care taken to prepare the meal with new utensils to respect dietary laws.

For best results, ensure the spinach is thoroughly drained and chopped finely to integrate smoothly into the dough without creating large green chunks.

The dough may require up to 3 cups of flour depending on the moisture content of the spinach and eggs; add gradually until the dough is smooth and manageable.

After boiling the fresh pasta, the cold water bath stops the cooking process and helps maintain the texture of the sheets before layering.
