Description

Indulge in these luxurious Layered Mint Chocolate Candies, a sophisticated treat perfect for holiday gatherings or afternoon tea. This recipe creates a beautiful tri-color fudge with a base of rich semi-sweet chocolate, a vibrant mint-flavored center, and a final layer of smooth chocolate. The texture is dense and creamy, offering a delightful contrast between the deep cocoa notes and the refreshing coolness of peppermint extract. Easy to make with just a few pantry staples, these candies require no cooking of the milk mixture, just gentle melting. They are an elegant homemade gift or a special dessert to enjoy with coffee.

Ingredients

Directions

  1. Line an 8 or 9-inch square pan with wax paper or parchment paper, leaving an overhang on the sides for easy removal.
  2. In a heavy saucepan over low heat, melt the semi-sweet chocolate squares with 1 cup of the sweetened condensed milk, stirring constantly until smooth.
  3. Remove the saucepan from the heat and stir in 1 teaspoon of vanilla extract.
  4. Spread half of this chocolate mixture evenly into the bottom of the prepared pan.
  5. Place the pan in the refrigerator for 10 minutes or until the bottom layer is firm.
  6. While the first layer chills, set aside the remaining half of the semi-sweet chocolate mixture at room temperature.
  7. In a clean heavy saucepan over low heat, melt the white chocolate squares with the remaining sweetened condensed milk, stirring constantly until smooth.
  8. Remove from heat and stir in the peppermint extract and the remaining 1 teaspoon of vanilla extract.
  9. Add green food coloring to the white chocolate mixture and stir until a uniform mint green color is achieved.
  10. Pour the mint mixture over the chilled chocolate layer in the pan and spread evenly.
  11. Return the pan to the refrigerator for 10 minutes or until the mint layer is firm.
  12. Spread the reserved semi-sweet chocolate mixture over the mint layer.
  13. Chill the pan for at least 2 hours, or until the candy is completely firm.
  14. Use the wax paper overhang to lift the fudge out of the pan and place it on a cutting board.
  15. Peel off the wax paper and cut the fudge into squares.

Note

Store leftovers loosely covered at room temperature to maintain texture. Avoid refrigerating for long periods as it may cause the chocolate to bloom (white spots).

For a stronger mint flavor, increase the peppermint extract to 1.5 tablespoons, but be cautious as it is potent.

Ensure all utensils and saucepans are dry when melting chocolate to prevent seizing.

You can substitute semi-sweet chocolate with dark chocolate for a richer taste.
