Ingredients

Directions

  1. Prepare the lemon curd base: In a microwave-safe bowl, whisk together sugar, cornstarch, and flour until no lumps remain.
  2. Gradually stir in water until the mixture is completely smooth.
  3. Cook in the microwave on High for 2-3 minutes, stopping to stir every 30 seconds, until the mixture boils and thickens.
  4. Reduce heat to Medium and cook for 1 more minute, stirring frequently.
  5. Remove from microwave. Quickly stir about 1/4 cup of the hot mixture into the beaten egg yolks to temper them.
  6. Pour the yolk mixture back into the hot pot, stirring constantly to combine.
  7. Cook on High in the microwave for 30-60 seconds, stirring 2-3 times, until the mixture bubbles and thickens further.
  8. Remove from microwave and immediately stir in butter, grated lemon peel, and lemon juice until smooth.
  9. Transfer approximately one-third of the lemon mixture into a separate small bowl.
  10. Immediately add white chocolate chips (or chopped white baking bar) to the hot lemon mixture in the small bowl and stir until melted and smooth.
  11. In a food processor or mixing bowl, beat cream cheese until smooth and creamy.
  12. Add the melted white chocolate-lemon mixture to the cream cheese and mix until fully blended.
  13. Spread the white chocolate truffle mixture evenly over the bottom of the cooled, baked pie crust.
  14. Spoon the remaining lemon curd mixture over the cream cheese layer, spreading it gently to cover.
  15. Refrigerate the pie for 2 to 3 hours, or until firmly set.
  16. Before serving, pipe or spread whipped cream over the top and garnish with toasted sliced almonds.

Note

Ensure the pie crust is completely cool before adding the truffle layer to prevent melting.

The lemon curd must be hot enough to melt the white chocolate smoothly. If it cools too much before adding the chocolate, reheat slightly in the microwave.

To toast almonds: Place in a dry skillet over medium heat for 2-3 minutes, stirring frequently, until golden and fragrant. Watch closely to avoid burning.

This pie can be stored in the refrigerator for up to 3 days. Cover tightly with plastic wrap or store in an airtight container.

For a dairy-free variation, use a vegan pie crust, coconut cream instead of whipping cream, and dairy-free white chocolate chips.

If you prefer a stronger lemon flavor, add an extra tablespoon of lemon juice or zest.

Let the pie sit at room temperature for 15 minutes before slicing for easier cutting and optimal flavor release.
