Lemonade Marmalade
Description
This vibrant Lemonade Marmalade captures the essence of fresh citrus in a smooth, glossy preserve. Unlike traditional marmalades that rely on lengthy boiling to break down the peel, this recipe uses liquid pectin to set the mixture quickly, resulting in a tender texture that highlights the bright, zesty flavor of the lemon rind. The subtle addition of baking soda helps soften the peel while neutralizing some bitterness, creating a balanced sweet-tart profile. Perfectly spreadable, it adds a sophisticated twist to morning toast, yogurt, or cheese boards. It is also an excellent accompaniment to roasted chicken or pork, offering a refreshing contrast to rich, savory dishes. Made with just five simple ingredients, this marmalade is a wonderful way to preserve the peak flavor of lemons for enjoyment throughout the year.Ingredients
Directions
-
Wash lemons thoroughly, then use a vegetable peeler or paring knife to remove the peel in strips, avoiding the bitter white pith.
-
Slice the lemon peel into thin slivers and set aside.
-
Cut the remaining lemon flesh into sections, remove any seeds, and chop the pulp into small pieces.
-
In a heavy-bottomed saucepot, combine the lemon peel slivers, baking soda, and water.
-
Place the pot over medium-high heat and bring to a boil, stirring frequently.
-
Once boiling, add the sugar and the chopped lemon pulp, stirring well to dissolve the sugar.
-
Bring the mixture back to a full, rolling boil, stirring occasionally.
-
Boil hard for exactly 1 minute.
-
Remove the pot from heat and immediately stir in the liquid pectin.
-
Skim any foam from the surface using a spoon.
-
Let the marmalade stand for 5 minutes, stirring occasionally to distribute the fruit pieces evenly.
-
Ladle the hot marmalade into sterilized hot jars, leaving 1/4 inch (6 mm) of headspace at the top.
-
Wipe the jar rims clean, adjust the lids and bands, and process in a boiling water bath for 10 minutes.
