Ingredients

Directions

  1. Briefly saute veggies in olive oil for 3-4 minutes.
  2. Place all ingredients, except sausage, in a large pot and simmer, covered, for about 2 hours.
  3. Dice sausage without casings and simmer 10 minutes.
  4. Drain.
  5. Add to soup 1/2 hour before serving.
  6. Top with Parmesan cheese.
  7. Sylvia's comments: rather than messing with diced summer sausage, I chopped up some bacon and threw it in an hour before cooking.
  8. I probably didn't need to; the soup was very flavorful.
  9. But this has kept a week in the fridge/cooler and has heated very well in the microwave at work
