  2. Soak the sausage in water for 2 hours.
  3. Wash lentils, cover with water and cook 45 minutes.
  4. Wrap the sausage in cheesecloth, pierce with a fork and
  5. cook in broth over low
  6. heat 50 minutes, skimming off any fat.
  7. Cool, unwrap and remove casing.
  8. Reserve broth.
  9. In a fry pan, heat oil and saute onion, celery, carrot, garlic and sage.
  10. Drain lentils; add the vegetables, salt, pepper and tomato sauce.
  11. Add 3 ladlefuls of broth from the sausage.
  12. Slice the sausage and serve with lentils
