Directions

  1. Rinse the lentils thoroughly under cold water until the water runs clear.
  2. Finely chop the leek (or green onion), carrot, celery, and onion.
  3. In a large saucepan, bring 6 cups of water to a boil.
  4. Add the rinsed lentils, diced bacon, chopped leek, carrot, and celery to the boiling water.
  5. Reduce heat, cover partially, and simmer for 30 to 40 minutes.
  6. Meanwhile, heat vegetable oil in a small frying pan over medium heat.
  7. Sauté the chopped onion until soft and translucent.
  8. Sprinkle the flour over the onions and stir constantly to combine.
  9. Lower the heat and cook the flour mixture, stirring constantly, until it turns a light golden brown. Do not burn the flour.
  10. Carefully stir 1/2 cup of the hot lentil soup into the browned flour mixture in the frying pan.
  11. Whisk vigorously with a wire whisk until the mixture is smooth and well-blended.
  12. Stir the vinegar into the thickening mixture.
  13. Pour the contents of the frying pan back into the main soup pot and stir well to combine.
  14. Cover and continue to simmer for another 30 minutes, or until the lentils are tender.
  15. Add the thickly sliced frankfurters and tomato catsup to the soup.
  16. Cook for a few more minutes until the frankfurters are heated through.
  17. Season with salt and black pepper to taste.
  18. Serve hot.
