Description

This elegant Low-Fat Chocolate Amaretto Custard offers a sophisticated twist on classic desserts. It features a smooth, dark chocolate custard infused with robust espresso and the distinctive almond flavor of amaretto cookies. The base is a thin layer of homemade caramel that adds a luxurious sweetness without overwhelming the palate. The texture is creamy and set, yet tender, with a pleasant crunch from the finely crushed amaretti cookies folded into the mix. Perfect for dinner parties or special occasions, this dessert balances indulgence with lighter ingredients. It is best served at cool room temperature to allow the flavors to meld and the custard to unmold easily.

Ingredients

Directions

  1. Preheat oven to 450 degrees F (230 degrees C).
  2. Place the 3/4 cup sugar in a small heavy-bottomed saucepan over medium heat.
  3. Cook without stirring, gently swirling the pan occasionally, until the sugar dissolves and turns a rich golden-brown amber color.
  4. Carefully add the water to the caramel (it will steam and bubble vigorously) and stir until smooth and incorporated.
  5. Immediately pour the hot caramel into an 8-inch round baking dish or springform pan, tilting to coat the bottom evenly.
  6. In a large bowl, beat the eggs with the 2/3 cup sugar until the mixture is light and pale.
  7. Stir in the cocoa powder and ground espresso until fully dissolved.
  8. Gradually stir in the milk, mixing until smooth.
  9. Fold in the finely crushed amaretti cookies.
  10. Pour the custard mixture over the caramel in the baking dish.
  11. Cover the dish tightly with aluminum foil.
  12. Bake for about 50 minutes, or until the custard is set but still slightly jiggly in the center. The top may crack; this is normal.
  13. Remove from oven and allow to cool completely at room temperature.
  14. Cover and refrigerate for at least 8 hours, or overnight, to set and chill.
  15. Before serving, bring to cool room temperature for 30 minutes, then run a knife around the edge and unmold onto a large plate.
