These Lunch Box Lollipops are a delightful twist on classic banana cookies, designed specifically for kids' lunchboxes or a fun snack time. The texture is chewy and satisfying, thanks to the quick-cooking oats and chopped almonds, while raisins add bursts of fruity sweetness. Ingredients

Directions

  1. Preheat the oven to 350°F (175°C) and lightly grease cookie sheets or line them with parchment paper.
  2. Peel the bananas and place them in a blender. Process until smooth and pureed; measure out 1 cup of the puree for the recipe (reserve the rest for another use).
  3. In a large bowl, beat the brown sugar and softened margarine together until the mixture is light and fluffy.
  4. Beat in the egg, followed by the 1 cup of banana puree, mixing until well combined.
  5. In a separate small bowl, combine the oats, flour, cinnamon, nutmeg, baking soda, and salt.
  6. Add the dry ingredients to the wet banana mixture and stir just until blended; do not overmix.
  7. Stir in the raisins and chopped almonds until evenly distributed throughout the dough.
  8. Drop the dough by 2 heaping tablespoonfuls onto the prepared cookie sheets, spacing them about 2 inches apart.
  9. If using, gently push a popsicle stick into the center of each mound of dough before baking.
  10. Flatten the tops of the cookies slightly with the back of a spoon.
  11. Bake for 15 to 18 minutes, or until the cookies are lightly browned and set.
  12. Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to wire racks to cool completely.
