Directions
-
In a medium saucepan, combine 1 cup of milk, 1/4 cup of sugar, 1/4 cup of the chopped macadamia nuts, salt, and vanilla extract. Heat over medium heat until the mixture just begins to simmer (scalding), stirring occasionally.
-
In a small bowl, whisk together the remaining 1/3 cup of milk, the whole egg, and cornstarch until smooth and fully incorporated.
-
Slowly pour a small amount of the hot milk mixture into the egg mixture while whisking constantly to temper the egg and prevent curdling.
-
Return the combined mixture to the saucepan. Cook over medium-low heat, stirring constantly with a wooden spoon, for about 5 minutes or until the custard thickens enough to coat the back of the spoon.
-
Remove the custard from heat and allow it to cool completely at room temperature for about 1 hour.
-
In a clean bowl, beat the egg whites until soft peaks form.
-
Gently fold the beaten egg whites into the cooled custard mixture in two additions, being careful not to deflate the mixture.
-
Pour the finished filling into the baked pie shell. Smooth the top with a spatula.
-
Refrigerate the pie for at least 2 hours, or until firmly set.
-
Before serving, top with sweetened whipped cream and sprinkle with the remaining 1/4 cup of chopped macadamia nuts.
