Directions
-
Preheat the oven to 400ðF (200ðC).
-
Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package directions until tender. Drain in a colander and set aside.
-
In a large saucepan, heat corn oil over medium heat. Add the pearl onions and crushed garlic clove. Sauté, stirring constantly, until the onions are almost tender, about 3 minutes.
-
Stir in the undrained tomatoes, breaking them up with a spoon. Add the sugar, tomato paste, and 1/2 teaspoon salt. Simmer for a few minutes to create a thick sauce.
-
In a large bowl, beat the eggs until light. Stir in the cottage cheese, chopped spinach, 1/2 cup of the grated Cheddar cheese, ground sage, and 1/2 teaspoon salt. Mix well to combine.
-
In an ungreased 13x9-inch baking dish, layer one-third of the tomato sauce, half of the cooked macaroni, one-third of the remaining Cheddar cheese, and half of the spinach-cheese mixture.
-
Repeat the layers with the remaining macaroni, spinach mixture, and sauce. Spread the remaining tomato sauce over the top layer and sprinkle the remaining Cheddar cheese around the edges and center of the casserole.
-
Cover the dish with foil and bake in the preheated oven for 25 minutes.
-
Remove the foil and bake for an additional 5 minutes, or until the mixture is hot, bubbly, and the cheese is melted and lightly golden.
-
Let stand for 5 minutes before serving to allow the casserole to set.
