Directions
-
Preheat oven to 180C/360F.
-
Grease a 2lb loaf tin and line the base with greased greaseproof paper.
-
Place the brown sugar, softened butter, and malt extract in a large bowl.
-
Beat the mixture well until it becomes pale and fluffy.
-
Gradually beat in the eggs, adding them one tablespoon at a time to prevent curdling.
-
Sift the wholemeal self-raising flour and ground cinnamon into the creamed mixture, ensuring any bran remaining in the sieve is also added to the bowl.
-
Using a metal spoon, gently fold in the flour mixture.
-
Fold in the dried mixed fruit until evenly distributed.
-
Spoon the mixture into the prepared loaf tin and level the top.
-
Bake in the oven for 1 hour, or until a skewer inserted into the center comes out clean.
-
If the top browns too quickly, cover loosely with foil for the remaining baking time.
-
Leave to cool in the tin for 5 minutes.
-
Turn out onto a cake rack to cool completely.
-
Sprinkle with caster sugar and serve with spiced butter if desired.
