Mandarin Rice Pudding
Description
This comforting Mandarin Rice Pudding is a delightful twist on the classic dessert, blending the creamy richness of evaporated milk and beaten eggs with the bright, sweet zest of mandarin oranges. The slow-cooking method allows the rice to soften completely, absorbing the light brown sugar and vanilla for a deep, caramel-like flavor profile. Texturally, it offers a perfect balance between the tender rice grains and the juicy orange segments, creating a spoonable treat that feels both indulgent and homestyle. It is an excellent way to use up leftover cooked rice, transforming it into something special. Serve this warm pudding for a cozy family dinner, a festive holiday gathering, or as a sweet treat on a chilly evening. The subtle citrus notes cut through the sweetness, making it a refreshing yet satisfying end to any meal.Ingredients

Note
For a classic rice pudding flavor without the citrus twist, use 1/2 cup additional evaporated milk in place of the mandarin orange liquid and increase vanilla to 2 teaspoons. Omit the mandarin orange sections entirely.
Raisins are optional. You can omit them for a smoother texture or substitute with chopped dried cranberries or apricots for a different flavor profile.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. The pudding will thicken as it cools; add a splash of milk when reheating to restore creaminess.
Ensure the slow cooker is kept on the appropriate setting to avoid overcooking the eggs, which could cause curdling. A gentle heat is key to a smooth custard-like consistency.
