Marinated Nigari Tofu
Description
This elegant yet simple dish transforms humble nigari tofu into a flavorful centerpiece through the power of a vibrant marinade. The key is using the firmest tofu available, which holds its shape while absorbing the rich, aromatic blend of sesame oil, soy sauce, and mirin. The result is a tender, savory bite with a subtle sweetness and a hint of citrus brightness from fresh lemon juice. Perfect served at room temperature as an appetizer, added to salads for extra protein, or enjoyed alongside warm noodles. Its a versatile, plant-based option that brings authentic Asian-inspired flavors to your table without complex cooking techniques.Ingredients
Directions
-
Mince the garlic cloves finely.
-
In a shallow bowl or baking dish, combine the minced garlic, sesame oil, soy sauce, mirin, brown sugar, lemon juice, salt, and crushed red pepper.
-
Whisk the mixture vigorously until the brown sugar and salt are completely dissolved and the marinade is well combined.
-
Drain the tofu and cut it into 1/2-inch by 1 1/2-inch strips or pieces.
-
Gently place the tofu pieces into the marinade, ensuring they are submerged or evenly coated.
-
Let the tofu marinate at room temperature for at least 2 hours, turning the pieces every 20 to 30 minutes to ensure even flavor absorption.
-
For best results, marinate for up to 4 hours, refrigerating if the room temperature is above 75F (24C).
-
Serve the marinated tofu at room temperature or chilled.

Note
Tofu Selection: Nigari tofu is one of the firmest varieties available and holds up best to marinating. If you cannot find nigari tofu, use the firmest tofu you can find. Soft or silken tofu will break down and cause the marinade to become dilute.
Substitutions: If you cannot find mirin, substitute with an equal amount of sweet wine, sherry, or dry white wine. For a vegan option without alcohol, you can omit the mirin or use a splash of apple juice mixed with a little extra sugar.
Storage: Marinated tofu keeps well in the refrigerator for up to 3 days if covered tightly. It is best served chilled or at room temperature.
Serving Suggestions: This dish is delicious on its own, added to green salads, served over cold or warm noodles, or used as a protein topping for rice bowls.
Preparation Tip: If your tofu is very watery, press it gently or let it drain for a while before slicing to help it absorb more marinade.
